The White Lady

Tart, tasty and oh so refreshing!

Ingredients

  • 60 ml 6 O'clock Gin
  • 25 ml Lemon Juice
  • 15 ml Simple Syrup (1:1)
  • 1 Egg White (beaten)

Instructions

  1. Add all the ingredients into a Boston shaker and dry shake (i.e. shake without ice), then open the Boston tin, fill with ice and shake again to chill the drink. Double strain into a chilled coupette glass. Garnish with a twist of lemon peel.

Dates From: Sometime around the 1920’s. This is another cocktail of disputed lineage… along with many other such as the Southside, the Martini and many others!).
Key Flavours: Tart lemon & punchy gin balanced with a light, foamy texture.
Background: The origin of this classic ‘sour’ drink is much disputed. It can be considered a variant of the Sidecar (which is one of the most classic brandy cocktails), but the famous Harry Cradock also lays claim to the drink in his wonderful ‘Savoy Cocktail Book’ of 1930. Whatever story you believe, don’t be afraid of the egg white – it’s an essential ingredient that really elevates the drink to its classic status. Think fluffy chocolate mousse (rather than omelette!) and you’ll understand why egg whites are used in a number of other deliciously classic cocktails.
