Fruity raspberries balanced with complex botanicals and refreshing citrus.

Ingredients

  • 50 ml 6 O'clock Gin
  • 15 ml Lemon Juice
  • 15 ml Dry Vermouth
  • 10 ml Raspberry Liqueur
  • 1 Egg White (beaten)

Instructions

  1. Add all the ingredients into a Boston shaker (2 piece), and dry shake (i.e. shake without ice), then open the Boston tin, fill with ice and shake again to chill the drink. Double strain into a chilled coupette glass. Garnish with fresh raspberries.

Background: Created at Philadelphia’s eponymous Clover Club - a gentleman’s club located in the Bellevue-Stratford Hotel on the corner of Broad Street and Walnut Street. While some consider it a hard cocktail to get right - and argue over the inclusion of sweet or dry vermouth (or none at all) - it’s definitely worth persevering with. Try using Bramley & Gage Raspberry Liqueur to make things a whole lot quicker – I really does captures the fresh raspberry taste of summer, and you can always add what’s left in the bottle to your next glass of prosecco!
